Judges comments from the Great Taste Awards: These petite and tender herring fillets have been well-prepared and marinated. We admired the succulent texture and the balance of salt and sweet. The dill, mustard seeds and red peppercorns were an attractive and flavourful element - a lovely combination.
There is a lovely sweet cure to this fish. It's quite an unusual product these days, and one judge welcomed it, recalling cured herring that he enjoyed years ago. It is a very clean taste, sweet and spicy, and with no harsh notes from the mustard or the acetic acid.
