The Viogner grapes are handpicked, hand-sorted and pressed whole. The Viognier juice is vinified in new Allier oak 228l barrels. The wine is left on its lees for up to 6 months to go through malolactic fermentation and then racked and laid for up to 12 months. The Rolle juice is vinified in temperature-controlled stainless-steel tanks and blended in to add acidity and crisp citrus fruit.
Domaine De La Combe A family-owned boutique vineyard producing a small quantity of premium organic wines and hand harvested grapes reflect the classic terroir and climate of the region, Château de La Cômbe stands on the Ancient Roman road the Via Julia Augusta, connecting Frejus and Vidauban, and had been producing wines for centuries. In 2009, the château was lovingly restored and the vines were replanted to provide our first harvest in 2013. Since then our wines have received numerous prestigious awards and are enjoyed by a privileged few.
